Milk Tart Ice-Cream..... My SPAR Prep Time:15 minutes Cook Time:6 hours freezing time Combining two South African dessert favourites, it just has to be a winner! Ingredients: 500 g SPAR vanilla custard 3 SPAR egg yolks 250 ml SPAR icing sugar 5 ml vanilla essence 3 SPAR egg whites 250 ml SPAR cream 100g SPAR coconut biscuits, broken into bite size pieces Cinnamon to dust Method Mix the custard, egg yolks, icing sugar and vanilla essence together. Beat egg whites until stiff peaks form. In a separate bowl beat the cream and fold the custard mixture together in with the beaten egg whites. Lastly fold in the chopped biscuits. Pour into a suitable container. Dust with cinnamon and place in a deepfreeze for about 6 hours or until it has frozen. Scoop into balls using an ice-cream scoop. Serve sprinkled with extra cinnamon. Hints and Tips Change the ice-cream flavour to cream cheese ice-cream by substituting the vanilla custard with 250g SPA

Coriander & Chili Vetkoek Bites.....   Golden Cloud INGREDIENTS 500 g Golden Cloud Vetkoek Mix 1 ½ cups luke warm water 3 red chillies chopped ½ tsp chilli powder ½ cup chopped dhania (coriander) ½ cup chopped onion Oil for deep frying INSTRUCTION Add all dry ingredients into a bowl and mix well. Add the water and form a soft dough. Roll out onto an oiled surface 1 cm thick. Cut into round shapes. Place these shapes onto a well oiled baking tray and leave to rest for 20 – 30 minutes. Spoon one by one into 170˚c oil and cook until golden brown (you will need to turn them). Place onto absorbent paper to drain. Eat as they are or fill them with your favorite savoury mince! Celebrating and planting trees at Mjoji Primary School In the spirit of Arbor Week, Sibaya Casino and Entertainment Kingdom volunteers joined Grade 7 learners in rolling up their sleeves and plant 20 indigenous trees at Mjoji Primary School, near Osindisweni hospital, outside Verulam. The trees, donated by Sibaya, were Grewia Occidentalis and Dovyalis Caffra, which are indigenous to KwaZulu-Natal. Arbor Week serves to generate awareness of the devastating effects of deforestation and urbanization on the environment, with the aim to encourage South Africans to do their bit to help replenish what has been lost by planting more trees. This event is a qualifier for the NABBA/WFF National Championships where two teams will be chosen to compete internationally in October and November.
